Apple Notes and Plain Text

I’m trying to use Apple Notes more. I frequently need to change rich text to plain text or cut part of a URL to paste elsewhere.

This doesn’t seem to work with Apple Notes as there’s no way to make text plain. You can’t select part of a URL, nor manipulate rich text.

Am I missing something?

As far as I know you can’t export plain text. You can copy and paste.

An option I sometimes use is exporter for Mac (‎Exporter on the Mac App Store). Free to export all notes as markdown. Paid feature $5 to do individual pages.
