Is there a way to always show the menu bar from Bartender? Whenever I click away from from the bar, the menu changes back to the default.

Bartender creates a second, hidden menu list - it’s supposed to be hidden. If you want menu items to always be visible you can configure individual items to (a) be on the main menubar or (b) be visible on both bars.
However, in Bartender preferences > General you can set to unhide selected menubar items
