I, too, use Things. I was a long time OmniFocus user but switched for the better UI.
A workaround that I put in place was to keep checklists as non-completable tasks. If you enter a *
before the task name it becomes just a list item. You can interact with it like normal, but you can’t ever complete it. This way I can mark off the main project task when I finish all the steps.
This of course won’t work if you need to be able to mark the individual sub-tasks off too. But for me most checklists are just a reminder of what to do. I don’t need to be able to mark them as complete.
