My Big Sur installation keeps trying to install beta updates.
I’ve removed the beta profile after the public release, but it still shows me beta updates I don’t want.
Any ideas how to get rid of these?

I saw this video in MacStories the other day. I believe this should help.
the bottom line is you need to re-enroll in the beta then unenroll again using the following terminal commands:
sudo /System/Library/PrivateFrameworks/Seeding.framework/Versions/A/Resources/seedutil enroll DeveloperSeed
sudo /System/Library/PrivateFrameworks/Seeding.framework/Versions/A/Resources/seedutil unenroll
Pasting these commands verbatim into Terminal worked like a charm.
