Does anyone know if there is a non-destructive way of disabling the Dock? AppleScript, Keyboard Maestro macro, etc.?
have you looked at option-command-d?

Is “disable” different than autohide?
tell application "System Events" to set the autohide of the dock preferences to true
That comes back when you move the mouse to the area right?
Yes. But you can use terminal to make the reveal really slow so it won’t come back instantaneously. I think this can solve your problem.
