I have a Kensington Thunderbolt dock for my 16" MBP and have not seen that issue. I also have the Belkin dock, and will give it a try. (Not trying to say it’s not an issue for you just because it’s not for me)
They finally got me… 
Whilst I had been toying with the idea of upgrading to Big Sur from Catalina, had been holding off until I figured I had enough time over a long-weekend (or some such) to deal with any unexpected issues…
Earlier today, I wasn’t paying enough attention to the usual upgrade notification, and instead of dismissing, hit “install”.
As it turns out, what was installed was a security update for Catalina.
But while it was happening, was convinced I had made a mistake, and had accidentally opted to install Big Sur.
When it turns out I was wrong – kind figured I had made peace with the fact already, and on a whim – did the install.
So far, so good.
Already forked over for an upgrade to Barkeeper 4. See CCC will probably need it as well. And Screenflow.
But so far –– touching imaginary forests of wood –– seems to be working OK…
Will no doubt come across the rough edges over the next few days, but oh well.

Launchpad? I have it in my dock but never even notice the icon now. I did prefer the old one, tbh.
If you don’t use Launchpad, you can always remove it from the dock. (I use it because I find it helpful when I screenshare into a Mac, especially from an iPad).
