I basically do this via Mission Control. When I want a clean workspace, I’ll just open mission control and create a new desktop which will be empty. I often do this for Zoom meetings and want to just share 1 app on screen and not have all my other open apps showing up.

One thing that is not clear to me is if you can save multiple sessions or only one. Initially, I assumed multiple, but there is absolutely no mention of that option specifically that I could find. If it can only save one session, then its usefulness (and intended use case) is very different that if multiple sessions can be saved and restored at any time.
