My phone is 13 pro max so I’ve no concerns over Apple Intelligence cause it won’t have any.
But I am seeing the occasional apps where they need more than 18.7.2

You’ll eventually have to update; it is just a matter of when. For me, security trumps everything. Given the security threat landscape, I immediately update with the newest OSs.
If you’re not comfortable updating, don’t. Not the end of the world.
As of 27.2 I believe this is now possible. This is a major change that various groups has caused Apple to implement, which was not possible when OS27 was released. This certainly brings a big sigh of relief to me and makes upgrading my ipad and macos now a plausible option.
Is it really a link from Apple? Is it safe?
yes from Apple and yes safe. It’s old-school mailing lists. Everybody from Linux community knows them…
I’m not one to fearmonger, but it’s worth at least glancing at the list of security issues fixed in the latest release. Link above, reposting it down here:
A fair bit of stuff on that list has almost certainly existed since far before OS 27. With AI assistance, some software vendors are finding bugs that have existed for 20+ years. And because of AI-assisted exploitation, they’re getting hammered more than ever.
I recently updated my Macbook to Golden Gate. I had an annoying bug where confirmation dialog windows went blank. Updating AltTab seems to have fixed my problem.
