I pretty much don’t need any of them now!
The only one in that list I use regularly is a calculator (PCalc).
I do not (and will not) use Grammarly. It imposes a prescriptive approach to writing that does not keep up with “English as she is spoke”.
I have no interest in emoji generation.
Apple’s current Calculator is adequate for my needs and when it isn’t I use macOS/UNIX bc.
Similarly I have no need for maths solving programs but should I ever require one I would install Octave and similar open source programs.
Passwords? Well I have my own methodology for creating and remembering them. My GNUprivacy password. for example, is 40+ characters long.
Might be interested in hiking trails except I already have OpenStreetMap available and set as default for my GPS tracker app.
Phone call recording? I don’t use my iPhone much as a phone. Important communications I take via Zoom (and record them there).
Voice transcription would be useful only when practising the foreign languages I speak. Whether this new app would cope with an Asian language remains to be seen. (And my other non-English language is never spoken at all plus has no orthography.)
Phone mirroring might be useful but I can’t think of a use for it right now. I do however use my iPad in sidecar mode and my iPhone as my continuity camera.
As to AI apps I have have them all on my phone and the web sites are permanently open on my Macs.
All in all nothing there to concern me. And the observant will notice that the high powered stuff is clearly installed (or to be installed) on one or more of my Macs rather than my iPhone.
The only one I use is a Password App, 1Password. I have no plans to change.

Combination of upcase, L33T, and arbitrary substitutions. However my method of password generation is much more complicated than that.
Been using PCalc for what must be over 30 years now! Until someone makes a better calc app (unlikely) OR an app that offers an option for RPN (extremely unlikely), I’ll use PCalc for as long as it runs on my devices. I’m just not willing to unlearn RPN at this point in my life!
My work pays for Grammarly, so I’ll likely carry one using it.
1Password is much more than just passwords for me. I use it for all my documentation and rely on its sharing features. I also share it with people in other countries (family) and find Apple’s software usually only allows sharing to people on the same App Store country (i.e., I cannot share movies and purchases with my family abroad as they live in another country, I presume it will be the same if there is password sharing built-in). Even my kids and 80-year-old Mum uses it, and I’ve no intention of forcing them to migrate!!
Otherwise, I don’t use any of the other apps mentioned and don’t need them either.
Only two I use are 1Password and my HP 12C emulator. Dont see giving up either. Too much muscle memory on the 12C.
