I could swear I once ran across a macOS app that simplifies the process of customizing application keyboard shortcuts, bypassing the fiddly process of setting them in System Settings. I vaguely think I remember that it would allow you to open an application menu and then somehow edit the shortcuts from there, but I can’t for the life of me remember the name of the app. Anyone know what I’m talking about?

Could be, thanks, I’ll give it a try!
CustomShortcuts together with KeyClu (free) is a winning combo. In the settings of KeyClu you can enable integration of CustomShortcuts.
Keycue can do this in its latest version
KeyCue allows you to define own shortcuts and overwrite existing ones directly in the menubar. Assign or change shortcuts to your commonly used commands and get more efficient in everyday life with your customized shortcuts.
