I have a few older usb flash drives - For general use and for sharing files with others (maybe PC’s) - it looks like exFat seems a good general format. Seem ok?

Yes, exFat unless you have a device like an old camera that requires fat32.

Importantly, exFat with Master Boot Record, not GUID Partition Map.
Windows 10 does not understand GUID.
good point Q: if you did do exFat with GUID - then it would work ok but JUST for MAC right?
Yes, Mac will read anything it can create, so you’ll be hard pressed to break it on a Mac.
