Does anyone have any app suggestions or tips/tricks that would allow me to write bulleted lists in a handwritten form with the Apple Pencil but then convert it over to digital text to import into a Google Doc?

You could use Nebo, Notability or goodnotes to write + convert text and then use a Shortcut to copy text from input + open gdoc. Than you could paste the text in there.
Not aware of any app /service that automatically integrates with the gdocs. Maybe zappier or IFTTT?
I’ll second @AFC’s Nebo recommendation.
When I journal, I prefer to handwrite, but I love Day One. So I write in Nebo, then use the share sheet to send the text to Day One. No copy and paste needed.
