Drafts for Mac -- beta now available

You can use Drafts on iOS and Mac for free, but advanced features like custom actions require the subscription. On the Mac, there is no automation yet, but supposed to follow. Even if you just use it for quick capture, it is still convenient to be able to continue on the Mac, in cases where you haven’t finished what you started on iOS. (I think for the beta you need to be a subscriber, not sure about that)

The JSON backup is a plain text file, and the content of every note is in plain sight. It’s easy to open the back up in TextEdit and get the notes out with minimal effort to find and replace certain escaped characters like line feeds which are stored in the JSON as \n. Just do a global replace of these in your favorite text editor and you’re done.

Then someone needs to write an extractor. As has been said, this isn’t difficult. (If my plate weren’t full I’d do it - before anybody asks.)
