Does anyone know if the new “dark” icons are automatically switched on when your device is in dark mode, or is it a separate “switch” to throw? (In other words - can you have your phone in dark mode without the icons being changed?

Both are options. Tint is a third option with a couple of sliders to choose shade and intensity.
