The thing I didn’t see is what the average user can do to defend against it.

This apparently masquerades as a particular clipboard manager that’s available via Homebrew or Github. Is the Github version infected? The Homebrew one? How do users acquire this infected version in the first place?

And is there macOS software that can detect this sort of thing?

I scan my Mac at least once a week with the free version of Bitdefender that is available in the App Store. Apple has already patched around 200 vulnerabilities this year and most of them were discovered by other companies and researchers.
