After a few days use…I have just noticed a feature that has made me very happy and I have been waiting for for years and years.
Notes…no textured background…yessss
If now they’d only let us change the color… (yellow… who thought of that?)

I also like the Notes background in 14, but the rounded corners of the sidebar on iPad rubs me the wrong way, for some reason. I’d prefer a more squared off 2 pane view. In the 3 pane view, it’s not as bad, although this misalignment makes me deeply uncomfortable:
