I have a problem saving texts as PDF from my clients because when you use a standard page size, the page length cuts it off per page in the middle of a bubble. I just realized today I could use a custom page size and make the length to suit the text. Another text stream may need a different length.

Do you intend to print it or view it?
Perhaps HTML would be a better format? Then you need not worry about page size at all.
Within the confines of Messages on macOS, how am I supposed to save it as HTML?
I basically run a paperless office, so save on the file system and view, not print.
