Is there a way to stop Apple Pages from opening the Format Panel when creating a new document? I rather hide it so I can focus on writing and avoid the extra click to close it each time.

I don’t think there is.
The old version of Pages used to open the ruler (I think) every time a new document was created, so I had a Keyboard Maestro macro to hide that.
Now I have one to immediately hide the Inspector after I press ⌘N
Not an ideal solution, but a usable workaround for me.

Thank you, that looks like a good solution though I’m not sure it is much faster then clicking the paint brush and I don’t have Keyboard Maestro. I sure which Apple would add more options for preferences for things like this. Thanks!
