After changing my working layout I’d like to put my 24 inch iMac M1 on the wall. However I’ve come up with surprisingly little in the way of options by searching.
Has anyone else done this, and how?

You have an iMac with a stand, right? If it’s VESA you just need a VESA wall mount.
If you have the stand, you can get a clamp like this (or jury-rig one) and then do the VESA wall mount.

I have that adapter and it worked fine, although it was weird that the foot was always hanging there. I know some people cut them off, but I didn’t want to permanently modify my iMac. However, that adapter is for older iMacs. The M1 changed the foot design so I don’t think it works with them.
With a quick search I found this adapter for the M1/M3 iMac. However, I have not used it and don’t know how good it is, although reviews seem to be positive.
Oops; that’s good to know. I bet it could be jury-rigged safely. This is where I head down to the grizzled experts behind the fastener counter at the local hardware store.
