Went to download iOS 27, hit the button, then swiped away. Came back to an iOS 26.7 page.
What?
The slowest installing security update in history! 
Update: after installing iOS 26.7,I finally started downloading iOS 27, then it switched and started installing 26.7 again.
Same here on my iPhone. It is installing 26.7 a second time now.
Instead of installing 27.0. 
By the time it was done installing, I ended up with iOS 27 installed after all.
